- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and peel (if desired) the sweet potatoes, then cut into 1-inch cubes.
- In a large bowl, toss sweet potato cubes with olive oil, salt, and pepper.
- Spread the sweet potatoes on the baking sheet in a single layer and roast for 25-30 minutes, stirring halfway through.
- Once done, remove from the oven and top with feta cheese and Kalamata olives.
- Garnish with fresh herbs if desired and serve warm.
