- Bring a large pot of salted water to a boil. Add the rotini pasta and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
- While pasta cools, wash and chop your vegetables: halve the cherry tomatoes, dice the cucumber, and slice the black olives and bell peppers. Combine with cooled pasta.
- Pour the Olive Garden dressing over the pasta and vegetables. Toss gently to coat evenly.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
- Serve cold, optionally garnished with additional Parmesan cheese.
