- Preheat your oven to 400°F (204°C). Cut the bell peppers in half lengthwise, remove seeds and ribs, and brush with olive oil. Bake for 20 minutes.
- Microwave the spinach for 15-30 seconds until wilted, then chop roughly.
- In a mixing bowl, combine spinach with ricotta, mozzarella, parmesan, green onions, basil, parsley, spices, beaten eggs, and breadcrumbs until well mixed.
- Stuff pepper halves with the filling, pressing down slightly. Bake for another 30 minutes until golden and bubbly.
- Let cool for a few minutes before serving to let the filling set.
