  • 4 fillets Salmon Fresh or thawed frozen; season to your liking
  • 4 cups Broccoli Florets Chopped into small pieces
  • 1.5 lbs Baby Potatoes Red or golden, no peeling required
For the Seasoning
  • 3 tablespoons Olive Oil Can be replaced with avocado oil
  • 1 teaspoon Salt Season generously
  • 1 teaspoon Garlic Powder Customize based on taste
  • 1 teaspoon Italian Seasoning Replace with fresh herbs if desired
  • 1 teaspoon Cajun Seasoning Adds a spicy kick
For the Finishing Touch
  • 2 tablespoons Butter Optional for dairy-free diet
  • 1 whole Lemon Can replace with lime

Method
 

Instructions
  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Wash and halve the baby potatoes, then quarter them. In a bowl, combine potatoes with olive oil, salt, and Italian seasoning, and toss to coat.
  3. Spread the seasoned potatoes on the baking sheet and roast for about 15 minutes until slightly browned and tender.
  4. While the potatoes roast, wash and chop the broccoli into small florets. Drizzle with remaining olive oil and sprinkle with garlic powder; toss well.
  5. Pat the salmon fillets dry and season with Cajun seasoning. This creates a lovely crust when roasted.
  6. After 15 minutes, push the potatoes aside and place the seasoned salmon in the center, then scatter the broccoli on the opposite side.
  7. Return to the oven and bake for an additional 10-12 minutes until the salmon is flaky and opaque, and the broccoli is tender.
  8. Remove from the oven and top each salmon fillet with a small pat of butter. Serve hot and enjoy!
