- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Wash and halve the baby potatoes, then quarter them. In a bowl, combine potatoes with olive oil, salt, and Italian seasoning, and toss to coat.
- Spread the seasoned potatoes on the baking sheet and roast for about 15 minutes until slightly browned and tender.
- While the potatoes roast, wash and chop the broccoli into small florets. Drizzle with remaining olive oil and sprinkle with garlic powder; toss well.
- Pat the salmon fillets dry and season with Cajun seasoning. This creates a lovely crust when roasted.
- After 15 minutes, push the potatoes aside and place the seasoned salmon in the center, then scatter the broccoli on the opposite side.
- Return to the oven and bake for an additional 10-12 minutes until the salmon is flaky and opaque, and the broccoli is tender.
- Remove from the oven and top each salmon fillet with a small pat of butter. Serve hot and enjoy!
