  1. Begin by lightly seasoning the chicken with salt and black pepper.
  2. In a medium mixing bowl, whisk together honey, soy sauce, ketchup, minced garlic, ginger (if using), vinegar, and red pepper flakes.
  3. Pour the prepared sauce over the seasoned chicken in the slow cooker and shake gently to distribute.
  4. Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours until tender.
  5. For a thicker sauce, remove chicken, mix cornstarch with water, stir into the sauce, and cook on high for 10 minutes.
