Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease your loaf pans.
  2. In a small bowl, whisk together 1/4 cup of sugar and 1 tablespoon of cinnamon.
  3. In a large bowl, combine 1 cup of sugar, 1/3 cup of oil, 1/2 cup of sour cream, and 2 eggs, and mix until smooth.
  4. Add baking soda, salt, and mashed bananas to the wet mixture, then gradually mix in 1.5 cups of flour until just combined.
  5. Layer half of the batter in the pan, sprinkle with half the cinnamon-sugar, add the rest of the batter, and top with remaining cinnamon-sugar.
  6. Bake mini loaves for 30 minutes or a large loaf for 60 minutes, until a toothpick comes out clean.
  7. Let cool in the pans for 10 minutes, then transfer to a rack to cool completely.
