- Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by greasing or lining it.
- Mash the 3 ripe bananas in a large mixing bowl until smooth.
- Stir in ½ cup of melted unsalted butter, then add ¾ cup of brown sugar, 1 beaten egg, and 1 teaspoon of vanilla extract.
- Fold in 1.5 cups of all-purpose flour, 1 teaspoon of baking soda, ¼ teaspoon of salt, and ½ teaspoon of ground cinnamon until just combined.
- Gently fold in 1 cup of diced strawberries.
- Pour the batter into the prepared loaf pan and smooth the top. Optionally add more strawberries on top.
- Bake for 55–65 minutes or until a toothpick comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
