Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish or line it with parchment paper.
  2. In a mixing bowl, combine the chopped strawberries, rhubarb, sugar, cornstarch, and lemon juice. Gently toss until well-coated and let sit for 10-15 minutes.
  3. In a separate bowl, whisk together the flour, oats, brown sugar, cinnamon, baking powder, and salt. Cut in butter until mixed resembles coarse crumbs.
  4. Press two-thirds of the crumb mixture into the bottom of the prepared baking dish.
  5. Pour the fruit mixture evenly over the crust.
  6. Sprinkle the remaining crumb mixture over the fruit filling and press down gently.
  7. Bake for approximately 40-45 minutes or until the top is golden brown and the filling bubbles slightly.
  8. Allow to cool completely in the pan on a wire rack before slicing into squares.
