Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish or line it with parchment paper.
- In a mixing bowl, combine the chopped strawberries, rhubarb, sugar, cornstarch, and lemon juice. Gently toss until well-coated and let sit for 10-15 minutes.
- In a separate bowl, whisk together the flour, oats, brown sugar, cinnamon, baking powder, and salt. Cut in butter until mixed resembles coarse crumbs.
- Press two-thirds of the crumb mixture into the bottom of the prepared baking dish.
- Pour the fruit mixture evenly over the crust.
- Sprinkle the remaining crumb mixture over the fruit filling and press down gently.
- Bake for approximately 40-45 minutes or until the top is golden brown and the filling bubbles slightly.
- Allow to cool completely in the pan on a wire rack before slicing into squares.
