- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add the ground beef and cook for 5–7 minutes until browned. Drain excess fat.
- Sprinkle taco seasoning over beef and pour in water. Stir well and let simmer for 2–3 minutes.
- Add black beans, corn, and diced tomatoes to the skillet. Cook for an additional 2 minutes.
- In a greased baking dish, layer tortillas, 1/3 of the beef mixture, dollops of sour cream, and cheeses. Repeat layers.
- Cover with foil and bake for 20 minutes. Then uncover and bake for an additional 10 minutes until cheese is golden.
- Let cool for 5 minutes before slicing. Garnish with green onions and cilantro, if desired.
