Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the ground beef and cook for 5–7 minutes until browned. Drain excess fat.
  3. Sprinkle taco seasoning over beef and pour in water. Stir well and let simmer for 2–3 minutes.
  4. Add black beans, corn, and diced tomatoes to the skillet. Cook for an additional 2 minutes.
  5. In a greased baking dish, layer tortillas, 1/3 of the beef mixture, dollops of sour cream, and cheeses. Repeat layers.
  6. Cover with foil and bake for 20 minutes. Then uncover and bake for an additional 10 minutes until cheese is golden.
  7. Let cool for 5 minutes before slicing. Garnish with green onions and cilantro, if desired.
