For the Filling
  • 1 lb Lean Ground Beef or ground chicken/turkey
  • 1 medium White Onion
  • 4 cloves Garlic, minced or garlic flakes
  • 1 tsp Chili Powder or paprika/chipotle powder
  • 1/2 tsp Ground Cumin or ground coriander/taco seasoning
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Ground Paprika
  • 1/4 tsp Garlic Powder or garlic flakes
  • 1/4 tsp Onion Powder or garlic flakes
  • 1/4 tsp Crushed Red Pepper Flakes omit for milder version
  • 1/4 tsp Dried Oregano
  • 1 cup Chunky Salsa spicy or mild based on preference
  • 1/2 cup Water to cook beef filling
For the Sweet Potatoes
  • 4 Sweet Potatoes
For the Toppings
  • 1 cup Shredded Mozzarella or low-fat mozzarella
  • 1 cup Diced Tomatoes
  • 1 cup Mashed Avocado season as preferred
  • 1 cup Sour Cream or plain Greek yogurt

Method
 

Step-by-Step Instructions
  1. Poke holes in each sweet potato and cook in the microwave for about 10 minutes until fork-tender.
  2. In a skillet over medium-high heat, cook the ground beef for 5-7 minutes until browned, then add onion and garlic.
  3. Add chili powder, cumin, salt, pepper, paprika, garlic powder, onion powder, red pepper flakes, oregano, salsa, and water. Simmer for 5 minutes.
  4. Cut the cooked sweet potatoes lengthwise and gently press the sides to create a pocket for stuffing.
  5. Stuff the sweet potatoes with the beef mixture and top with mozzarella, tomatoes, avocado, and sour cream.
