  • 3 pounds beef chuck roast trimmed of excess fat
Vegetables
  • 4 medium carrots peeled and cut into chunks
  • 2 medium onions quartered
  • 4 cloves garlic minced
  • 2 stalks celery chopped
Liquid
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
Spices
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme dried

Method
 

Preparation
  1. Season the beef chuck roast with salt, pepper, and thyme.
  2. Place the vegetables (carrots, onions, garlic, celery) in the slow cooker.
  3. Add the seasoned roast on top of the vegetables.
  4. Pour beef broth and Worcestershire sauce over the roast.
  5. Cover the slow cooker and cook on low for 6-8 hours, or high for 4-5 hours.
  6. Once cooked, remove the roast and let it rest for 15 minutes.
  7. Slice and serve with the prepared vegetables and cooking liquid.
