  2. In a large mixing bowl, combine 1 cup of softened butter, 1 cup of granulated sugar, 1 cup of light brown sugar, and ½ cup of creamy peanut butter. Blend on medium speed until fluffy, then add 1 large egg and 1 teaspoon of vanilla extract and mix until smooth.
  3. In a separate bowl, sift together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt. Stir in 1 cup of quick-cooking oatmeal and mix until combined.
