- In a medium mixing bowl, whisk together soy sauce (or coconut aminos), honey, vegetable oil, fresh lime juice, minced garlic, chopped cilantro, and finely chopped red bell pepper until well emulsified and smooth.
- Place 4 boneless skinless chicken breasts into a zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring it's evenly coated. Seal the bag or cover the dish, then refrigerate for 30 minutes to 2 hours.
- Preheat your grill to high heat (400°F to 450°F). Lightly oil the grill grates to prevent sticking.
- Remove the chicken from the marinade and discard the marinade. Grill the chicken for 6–8 minutes per side, checking the internal temperature to ensure it reaches 165°F.
- Transfer the grilled chicken to a plate and cover loosely with aluminum foil. Allow it to rest for 5 minutes before slicing.
- For extra char, place the grilled chicken under the broiler for 2 minutes.
