- In a large bowl, whisk together one egg, chopped fresh dill, parsley, panko breadcrumbs, minced garlic, salt, pepper, and dried oregano until well combined. Gently add the ground turkey, taking care not to overmix. Form the mixture into 16 meatballs.
- Preheat the air fryer to 400°F. Place the meatballs in the air fryer basket and cook for 8-10 minutes, shaking halfway through. Alternatively, bake at 400°F for 20 minutes.
- In a saucepan, heat olive oil over medium heat. Add the couscous and toast for about 3 minutes. Pour in chicken broth, bring to a boil, reduce heat, cover, and simmer for 10 minutes.
- Prepare the salad by combining diced tomato, cucumber, thinly sliced red onion, and chopped parsley in a bowl. Whisk olive oil and lemon juice, pour over salad, and toss.
- To serve, divide couscous among bowls. Top with cucumber-tomato salad and meatballs. Add a dollop of tzatziki and garnish with lemon wedges.
