  • 2 stalks Green Onions Both white and green parts.
  • 1/2 cup Fresh Parsley Chopped; cilantro can be swapped in.
  • 1/4 cup Fresh Basil Chopped; can omit or replace with dill.
  • 2 tablespoons Chives Chopped; minced shallots can be used instead.
  • 1 medium Avocado Chunked; optional ingredient.
  • 1 cup Cooked Quinoa or Chickpeas Optional for added protein; lentils or edamame are great substitutes.
For the Dressing
  • 1 cup Raw Cashews Soaked for blending; nut-free version can use silken tofu or sunflower seeds.
  • 1/2 cup Water Adjust based on desired consistency.
  • 2 tablespoons Lemon Juice Freshly squeezed; lime juice can be a substitute.
  • 1 tablespoon Apple Cider Vinegar Can substitute with white vinegar.
  • 1 clove Garlic Adjust to taste.
  • 2 tablespoons Nutritional Yeast Optional for cheesy flavor.
  • 1 teaspoon Sea Salt
  • 1/4 teaspoon Black Pepper

Method
 

Preparation
  1. Soak the cashews in warm water for at least 30 minutes or simmer them for 10 minutes if short on time.
  2. Blend the soaked cashews with lemon juice, apple cider vinegar, garlic, herbs, nutritional yeast, sea salt, and black pepper until smooth.
  3. Finely chop the green cabbage, cucumber, green onions, parsley, basil, and chives, then transfer to a large mixing bowl.
  4. Stir in cooked quinoa or chickpeas for added protein, if desired.
  5. Drizzle half of the cashew dressing over the veggies and toss everything together to coat.
  6. Garnish with avocado chunks and extra herbs, then serve fresh or chill briefly for enhanced flavor.
