Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. Combine flour, oats, salt, and baking soda in a large bowl. In a separate bowl, blend melted butter, brown sugar, and vanilla.
  3. Press most of the dough into the bottom of the prepared pan, setting aside some for the topping.
  4. Bake the crust for about 10 minutes until lightly golden. Cool slightly.
  5. Whisk together sweetened condensed milk, sour cream, egg yolk, lemon juice, lemon zest, and vanilla until smooth.
  6. Pour the filling over the crust and sprinkle the reserved topping on top.
  7. Bake for 17-20 minutes until golden brown and filling is set with a slight jiggle.
  8. Cool completely, then slice into squares and serve.
