  • 4 cups Corn Kernels Fresh or frozen, thawed
  • 1 cup Cotija Cheese Crumbled
  • 1/2 cup Mayonnaise Low-fat option available
  • 2 tablespoons Fresh Lime Juice Freshly squeezed
  • 1 tablespoon Tajín Seasoning Substitute with chili powder if needed
  • 1/4 cup Cilantro Chopped, or substitute with parsley
  • to taste Salt & Pepper Essential seasoning
Optional Garnishes
  • 1/2 cup Chopped Jalapeños For heat
  • 1/2 cup Chopped Bell Peppers For crunch
  • 2 cups Mixed Greens For serving

Method
 

Preparation
  1. Cook fresh corn by grilling for about 10 minutes until slightly charred, or sauté frozen corn in a skillet for 5-7 minutes.
  2. In a large mixing bowl, combine the corn with crumbled cotija cheese, mayonnaise, lime juice, and Tajín seasoning. Mix gently.
  3. Add chopped cilantro and season with salt and pepper, then stir to combine.
  4. Serve immediately or let it chill in the fridge for 30 minutes before serving.
