Salad
  • 1 head romaine lettuce chopped into bite-sized pieces
  • 1/2 medium red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 1 can tuna in olive oil drained and flaked
  • 1/3 cup green pimento stuffed olives
  • 1/3 cup black pitted olives
  • 2 large hardboiled eggs sliced in half

Method
 

Preparation
  1. In a small bowl, whisk together the dressing ingredients and set aside.
  2. Wash and dry the romaine lettuce, then chop into bite-sized pieces.
  3. Thinly slice the red onion and halve the cherry tomatoes, then add to the romaine in a large bowl.
  4. Gently toss the salad ingredients together.
  5. Fold in the flaked tuna, olives, and top with hardboiled eggs.
  6. Season and drizzle dressing over the salad, then toss gently before serving.
