Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Crush graham crackers and mix with melted vegan butter. Press into springform pan and bake for 10 minutes, then cool.
  2. Blend silken tofu, vegan cream cheese, and sweetener until smooth. Pour cheesecake filling over the cooled crust.
  3. Peel and chop apples, sauté with brown sugar and cinnamon until tender. Layer over the cheesecake filling.
  4. Mix oats, flour, and spices. Add coconut oil and mix until crumbly. Sprinkle over the apple layer.
  5. Bake for approximately 85 minutes or until set. It should jiggle slightly in the center.
  6. Cool completely in the pan before topping with caramel sauce and serving.
